Masala Vada! A favourite tea-time snack in South India. You can find this in any tea stall.

Vade, also known as wada or vade(in Sri Lanka) or vadai or bara (pronounced "vah-daa", "vah-dey", "baraa" or "vah-die"), is a savoury fritter-type snack from South India
Vadas can vary in shape and size, but are usually either doughnut- or disc-shaped and are between 5 and 8cm across. They are made from dal, lentil, gram flour or potato.
The Vada is a traditional South Indian food known from antiquity. Although they are commonly prepared at home, Vadas are as well a typical street food in the Indian Subcontinent and Sri Lanka. They are usually a high calorie morning food, typically about 300 Kilocal each, but in street stalls and in railway stations, as well as inside the Indian Railways, they are available as a snack all day. It is known as Vades in South Africa, where a large south Indian population is found .

To fight evening hunger pangs ! And my friend loves this vada. So made this yummilicious vadas with cheese inside !

INGREDIENTS: (makes 16 vadas)
Channa dal -1 cup
Garlic - 8pods
Saunf - 1 tsp
Red chillies - 3
Ginger - 1 inch piece
Coriander leaves - 1 tbsp chopped
Mint leaves - 1 tbsp chopped
Onion - 1 small chopped
Carrot - 2 tbsp grated
Grated mozzarella cheese - 1/4 cup
Salt - to taste
Oil - to fry
METHOD:
- Soak channa dal for an hour
- First grind chillies, garlic , ginger, saunf in mixie.Then add channa dal and grind coarsely
- Now add salt, chopped mint, coriander, onions and grated carrot. Mix well
- Heat oil for frying. Add 1 tbsp of hot oil to vada batter and mix well. This help for crisp vadas
- Now take some batter, flatten it, keep some grated cheese in center and make a ball. Flatten it. Ensure cheese is completely covered with vada batter.
- Let the oil be hot such that when u put little batter it comes up immediately.
- Fry vada in batches in medium flame. Remove when golden brown in colour .
Notes
- To make vadas for pooja , replace garlic with Asaefoetida ( Hing/Perungayam) , saunf with Jeera and make vadas sans onions
- Make vadas little flat so that stay crisp for longer
- Adjust chillies according to your taste
