After a long gap,am back with a traditional sweet that is made on many festive occasions. Lets say "karthigai special" :)



Wiki "gyan" about appam


Unni appam is a small round snack made from rice, jaggery, banana, roasted coconut pieces, roasted sesame seeds, ghee and cardamom powder fried in oil . Variations of the appam using jackfruit preserves instead of banana is also common. It is a popular snack in Kerala. In Malayalam, unni means small and appam means rice cake.

Æbleskiver is a similar dish in the Danish cuisine.
Reason for making it ...
This is made for all festival occasions like Krishna Jayanthi, Saraswathi Pooja,Karthigai deepam at Brahmin homes. So, we often make this as prasadam .

Why not, make it..

Appam is usually made using combination of flours and jaggery. The one mentioned here is my mother-in-law's method and I learnt from her. Try this to get fluffy and soft appams. Crunchy outside, soft inside, oh you will love this !!

INGREDIENTS: (around 12 appams)

Raw Rice - 1 cup
Urad dal (Ulatham parupu) - 1tsp
Jaggery - 1 cup (grated/chopped)
Coconut - 1tbsp (grated)
Cardamom powder - 1 tsp
Wheat flour - 1 tsp

METHOD:
  1. Soak the raw rice and urad dal in water for an hour. Keep all the ingredients ready.

  2. Drain the water completely and grind the rice and dal mixture first till it is completely done . It should be a thick paste.
  3. Once the rice is done to paste, add coconut and grind.
  4. After this, add jaggery little by little to the mixie jar and grind.Please note: Do not add one cup jaggery at one go. The batter will become very watery.
  5. Add little jaggery to rice batter, grind completely. Then add some more and grind. Repeat till all jaggery is added. 
  6. Now add cardamom powder and one spoon wheat flour and mix well. The batter should be like dosa batter consistency.
  7. Set aside the batter for 2 hours .
  8. Now,make cute appams in appe pan with little oil/ghee
  9. You can also deep fry in oil . In that case, the oil has to be hot (add a drop of batter and it should raise immediately) , add a spoon batter in  kadaai and cook in sim. Cook one by one.

Note
  • Add jaggery in portions and then grind.
  • Urad dal is added to make appams soft. Just add little .
  • The batter must be completely smooth with no lumps to get perfect appams. So grinding the batter is the vital part of the recipe. Grind without lumps.
  • Measure rice and jaggery in the same cup. If your cup is small (100gms), then reduce coconut and urad dal accordingly. If jaggery amount increases, then appam will be shapeless. Hence stick to the measurements.

Very tasty appams are ready for neivedhyam.
